Chicken Risotto | Cooking with Napolina

A delicious chicken and tomato risotto recipe that combines some of our tastiest ingredients with vegetables to deliver another tasty Italian style meal

300g chicken breasts, chopped into bite sized cubes
1 tablespoon Napolina Olive Oil
1 x 400g can Napolina Chopped Tomatoes
1 large onion, finely diced
1 stick of celery, finely diced
2 cloves of garlic, finely chopped
1 courgette, chopped
300g Arborio rice
1L chicken stock
150g frozen peas
50g grated Parmesan cheese
Handful of basil leaves
Salt
Black Pepper
