Chicken Seekh Kabab | Sanjeev Kapoor Khazana

Chicken mince mixed with a lot of spices spread into equal portions on satay sticks to make these delicious kababs.

CHICKEN SEEKH KABAB

Ingredients

2 cups chicken mince
1 medium onion, finely chopped
ΒΌ cup chopped fresh coriander leaves
1-2 green chillies, finely chopped
1 tablespoon chopped garlic
1 inch ginger, finely chopped
1 tablespoon lemon juice
Salt to taste
1 teaspoon green cardamom powder
1 teaspoon garam masala powder
1-2 tablespoons oil
Butter for brushing
Chaat masala for sprinkling

Method

1. Combine chicken, onion, chopped coriander, green chillies, garlic, ginger, lemon juice, salt and cardamom powder in a bowl and mix. Add garam masala powder and mix well.
2. Dampen your palms with water, divide the mixture into equal portions and spread it around 2 soaked satay sticks leaving the ends open and place them onto a plate.
3. Heat oil on a non-stick tawa. Place prepared kababs and cook for 8-10 minutes or till golden from all sides. Transfer on a plate.
4. Discard the satay sticks from the kababs and diagonally slice. Brush some butter on top and sprinkle some chaat masala.
5. Garnish with a mint sprig and serve hot with onion rings and a lemon wedge.

Preparation Time: 10-15 minutes
Cooking Time: 8-10 minutes
