Chicken Skin Gyoza with Plenty of Cabbage
Makes 4 gyoza

INGREDIENTS
4 pieces chicken skin
150g cabbage, finely chopped
A
100g ground pork
1 teaspoon soy sauce
1 teaspoon sake
1/2 teaspoon sesame oil
Pinch of salt
1 teaspoon sesame oil
1 teaspoon sake

PREPARATION
1. Mix the finely chopped cabbage with the ingredients marked A.
2. Place the cabbage mixture onto each piece of chicken skin and wrap them up to form 4 gyoza.
3. Heat sesame oil in a frying pan over medium heat. Place the wrapped gyoza into the pan with the seam side down. Cook until browned, then flip them over. Add sake, cover with a lid, and steam-fry over low heat for about 5 minutes until cooked through.
4. Remove the lid and continue to cook until the gyoza are crispy all over.
