Burgen buns sandwiched with shredded baked chicken, mayonnaise and lettuce.

CHICKEN SLIDERS

Ingredients

250 grams boneless chicken breasts
8 mini burger buns
Salt to taste
Crushed black peppercorns to taste
2 teaspoons mixed dried herbs
1½ teaspoons red chilli flakes
2 tablespoons chopped garlic
1 tablespoon oil + for searing
2 tablespoons mayonnaise + as required
3-4 Iceberg lettuce leaves, torn
2 medium tomatoes, sliced

Method

1. Preheat oven at 180ºC.
2. Take chicken breasts on a plate. Add salt, crushed peppercorns, mixed herbs, chilli flakes, garlic and 1 tablespoon oil and rub well on both sides. Set aside to marinate for 10-15 minutes.
3. Heat some oil in a non-stick pan. Place marinated chicken breasts in it and sear for 2 minutes on each side. Remove from heat and cook in the preheated oven for 8-10 minutes.
4. Slice the burger buns horizontally.
5. Heat a non-stick pan. Place the bun halves in it and toast lightly from both sides.
6. Roughly shred the cooked chicken with your hands and put in a bowl. Add 2 tablespoons mayonnaise and mix well.
7. Spread some mayonnaise on the base buns and the inner side of the upper halves. Place a piece of lettuce on the base buns. Top with a tomato slice and some chicken mixture, sprinkle some crushed peppercorns and cover with the upper halves. Press lightly.
8. Serve immediately.

Preparation Time: 25-30 minutes
Cooking Time: 15-20 minutes
