1.5 lbs (700 g) boneless skinless chicken breasts (or thighs)
1 teaspoon salt
4 green onions, separated

Sauce
4 tablespoons light soy sauce (or soy sauce)
2 tablespoons Chinese sesame paste (or unsweetened natural peanut butter)
2 tablespoons homemade chili oil (or more)
1 1/2 tablespoons Chinkiang vinegar (or 2 tablespoons rice vinegar)
4 teaspoons sugar
2 cloves garlic, grated
2 teaspoons grated ginger
1/2 teaspoon ground Sichuan peppercorns
