CHOCOLATE WHOOPIE PIES

Ingredients

¾ cup chopped dark chocolate
½ cup butter
1 cup castor sugar
2 eggs
1 teaspoon vanilla essence
1 cup refined flour (maida)
½ teaspoon baking powder
¼ cup cocoa powder
¾ teaspoon salt
¼ cup buttermilk
For icing
1 cup butter
1 cup icing sugar
¼ cup light corn syrup

Method

1. Preheat oven to 180°C.
2. Put chocolate in a bowl and melt in a microwave.
3. Put butter and castor sugar in a large mixing bowl and beat with an electric beater till light and fluffy.
4. Break an egg into the bowl and beat again. Repeat with the second egg. Add vanilla essence and beat well.Add melted chocolate and beat again.
5. Mix refined flour and baking powder and add to the egg and chocolate mixture.Add cocoa powder and salt and beat well to combine.Add buttermilk and beat.
6. Divide the mixture into equal portions and place them on a lined baking tray.
7. Keep the tray in the preheated oven and bake for five to ten minutes. Take the tray out and let them cool down.
8. To make the icing, put butter and icing sugar in a bowl and beat with an electric beater. Add corn syrup and beat again till well combined.
9. Once the cookies have cooled down to a room temperature, put the icing mixture into a piping bag fitted with a star nozzle. Pipe out icing on the flat side of half the cookies and place another cookie on each.
10. Arrange them on a serving plate and serve immediately.
