Ingredients:

• Chickpeas/Chole: 1 Cup
• Cardamom: 5-6
• Cinnamon sticks: 1
• Cloves
• Salt: to taste
• Onion: 3/4 cup, grated or pureed
• Tomato : 1 Cup
• Ginger-
• Garlic paste: 2 teaspoon
• Cumin powder: 1 teaspoon
• Red chili powder: 1 TSP
• Ghee : 1 TBSP
• Ginger: 1 inch, cut into julienne
• Dried fenugreek leaves [kasuri methi]: 1/2 tbsp, crushed
• Coriander leaves: 2 TBSP, chopped

Process:

• In a pressure cooker add the soaked and drained chickpeas
• Add 1 onion
• Add 1 Tomato
• Add 1 TSP Garlic
• Add Turmeric 1 TSP
• cardamom, cinnamon stick, and some salt
• Ginger: 1 inch,
• Add Cinnamon sticks: 1
• Add cloves
• Add Garlic Paste 1 TSP
• Add salt to taste
• Add Chopped Coriander (not leaves )
• Pressure cook at high flame till you get 3-4 whistles.
• Remove the cinnamon stick etc. from the chickpeas
• Slightly Mash
• In a wok, heat 2 tsp of oil
• Add 1 TSP cumin seeds
• Add Whole Red Chilli
• Add Onion paste 2 TBSP
• Add 1 TSP Garlic Paste
• Add 1 TSP Red chilli Powder
• Add 1 TSP Cumin powder
• Add Salt Taste
• Fry the onions till the raw smell goes away and they are light golden brown in color.
• Add Boiled Chickpeas/Chole
• Mix it Nicely
• Add roasted cumin and coriander powder
• Add Kasuri Methi
• cook till liquid has reduced
• Add 1 TBSP Fresh cream
• Add Ghee 1 TSP
• Garnish with chopped coriander leaves.
• Serve with Kulcha
