Omelette with Yam and Chikuwa
Servings: 2

INGREDIENTS
5 chikuwa (about 100g)
50g Chinese yam (aka Nagaimo)
1 leek
4 eggs
50ml dashi broth
1/4 teaspoon salt
1/2 tablespoon light soy sauce
1 teaspoon soy sauce
Oil, as needed

PREPARATION
1. Cut the chikuwa into 7mm slices. Peel and chop the yam. Cut the leek into 5mm pieces.
2. Beat the eggs in a bowl. Add dashi broth, salt, light soy sauce, and chopped yam (1) into the bowl.
3. Heat the oil in a pan. Cook the chikuwa (1) until golden on medium heat. Add the soy sauce for the flavor.
4. Pour the beaten eggs (2) into the pan (3). Add the leek (1). Cook on low heat until the eggs are getting set.
5. Enjoy!
