Shrimp Omelette Rice
Servings: 2

INGREDIENTS
16 shrimp (peeled)
15g zha cai
50g onions
4 eggs
2 strings scallion
Steamed rice, as needed
Salt, as needed
Pepper, as needed
Potato starch, A needed
1 teaspoon sesame oil
Vegetable oil, as needed

Sauce
1 tablespoon soy sauce
1 teaspoon sugar
1 teaspoon vineger
1 tablespoon water

PREPARATION
1. Devein the shrimp. Rub salt and potato starch with water onto the shrimp. Rinse and pat dry. Season with salt and pepper.
2. Chop the zha cai, onions, and scallions.
3. Mix all of the ingredients for the sauce in a bowl.
4. Beat the eggs with salt, pepper, sesame oil and the chopped scallions in a bowl.
5. Heat 1 tablespoon of the vegetable oil in a pan. Cook the shrimp on medium. Add chopped onions and zha cai. Transfer to the bowl (4) and mix with the eggs.
6. Put 2 tablespoons of the vegetable oil into the heated pan. Cook the eggs (5).
7. Put the steamed rice in a bowl. Put the omelette (6) on top. Serve with the sauce (3).
8. Enjoy!
