21280g120g120g110g2A300mlA2A2 1.5 42 A3 ===Simmered Tofu with MushroomsServings: 2INGREDIENTS1 pack firm tofu (280g)120g eringi mushrooms120g maitake mushrooms1 green onion10g grated gingerSalt, as needed2 tablespoons vegetable oilA300ml dashi2 tablespoons mirin2 tablespoons soy saucePotato starch (mixed with water), as neededPREPARATION1. Drain the tofu with paper towels. Cut into 1.5cm dices.2. Cut the eringi mushrooms. Break apart the maitake mushrooms. Cut the green onion into 2cm pieces.3. Heat the vegetable oil in a pan. Stir-fly the eringi and maitake mushrooms (2) on medium heat. Season with salt.4. Add all of the ingredients A and the tofu (1) into the pan (3). Simmer on medium heat for 3 minutes.5.
