22100g60g30g11/21/25g480ml200ml 5 4 10 4===Stuffed Fried TofuServings: 2INGREDIENTS2 fried tofu (aka Abuarage)100g ground pork60g shrimp (peeled)30g chopped onions1 teaspoon chopped ginger1/2 teaspoon salt1/2 egg white5g panko breadcrumbs4 teaspoons milk80ml tomato sauce200ml bouillonJapanese mustard greens (aka Mizuna), as neededPepper, as neededPREPARATION1. Cut the aburaage into halves. Devein the shrimp and cut into 5mm dices.2. Mix panko breadcrumbs with milk.3. Mix the ground pork, shrimp dices (1), chopped onions & ginger, and salt in a bow. Add the egg white, (2), and pepper. Mix well. Divide into 4 equal parts and stuff in each aburaage piece. 4. Put the stuffed aburaage (3) in a pot. Add the tomato sauce and bouillon. Cook on high heat. Simmer on low heat with a lid on for 10 minutes.5. Season the soup (4) with salt and pepper if necessary. Serve with the Japanese mustard greens (cut into 4cm pieces) on top.6.
