Stuffed Fried Tofu
Servings: 2

INGREDIENTS
2 fried tofu (aka Abuarage)
100g ground pork
60g shrimp (peeled)
30g chopped onions
1 teaspoon chopped ginger
1/2 teaspoon salt
1/2 egg white
5g panko breadcrumbs
4 teaspoons milk
80ml tomato sauce
200ml bouillon
Japanese mustard greens (aka Mizuna), as needed
Pepper, as needed

PREPARATION
1. Cut the aburaage into halves. Devein the shrimp and cut into 5mm dices.
2. Mix panko breadcrumbs with milk.
3. Mix the ground pork, shrimp dices (1), chopped onions & ginger, and salt in a bow. Add the egg white, (2), and pepper. Mix well. Divide into 4 equal parts and stuff in each aburaage piece.
4. Put the stuffed aburaage (3) in a pot. Add the tomato sauce and bouillon. Cook on high heat. Simmer on low heat with a lid on for 10 minutes.
5. Season the soup (4) with salt and pepper if necessary. Serve with the Japanese mustard greens (cut into 4cm pieces) on top.
6. Enjoy!
