Crispy Beef Strips with Carrot | HAPPY WOK

Here is a stir fry cooking that pop up, all over chinese restaurant in North America. Developed by Chinese master Chef that becomes a hit for western diners too. 1 pound ------ beef (flat iron steak cut)(cut into strips)
marinade for beef:
2 Tbsp ----- light soy sauce
½ tsp ------- white pepper
1 pc --------- egg
2 Tbsp ----- corn starch
1 pc ------------ carrot (8 oz. medium size, cut into strips)
cooking oil ---- as needed
1 Tbsp --------- each, ginger & garlic (minced)
10 pcs --------- dried red chili pepper
2 Tbsp --------- white sugar
3 Tbsp --------- chinkiang vinegar
2 Tbsp --------- light soy sauce
