Mongolian Beef spicy

All time favorite among dinner in Chinese restaurant here in America. Although not originated from Mongolia, but was created by Chinese chief here in USA. ( Just like General Tso's Chicken ) That become one of the favorite here. So tasty crispy coating & inside are so juicy & so tender. Make some soon and enjoy.

1 pound beef skirt steak
** marinade **
1 Tbs. rice wine
1 Tbs. light soy sauce
1 Tbs. sesame oil
tsp. baking soda
1 Tbs. cornstarch
1 Tbs. cooking oil
** premixed sauce **
cup beef broth
cup light soy sauce
tsp. dark soy sauce
2 Tbs. sesame oil
1 Tbs. Chinkiang vinegar
cup dark brown sugar
** coating for meat to fry **
cup potato starch
cup cornstarch
** slurry **
cup (2 Tbs.) water
1 Tbs. cornstarch
cooking oil for deep frying & stir frying
Also needed:
2 Tbs. ginger, minced
2 Tbs. garlic, minced
12 pcs. dried red chili pepper
5 stalks green onion, chopped into 3" lengths
