Delicious Kway Chap served by 90-year-old Ah Mah - the oldest hawker in SG Covent Garden Kway Chap

90-year-old Ah Mah, Mdm Chua, came from Guang Dong Province in China to Singapore in 1954. She started selling Kway Chap in a pushcart first at Kim Seng Road in 1964, then shifted to Covent Garden Food Centre in the 1970s, and finally settled in Havelock Road Cooked Food Centre in 2007.

Most of the braised dishes are prepared a day in advance by her 2 sons. When she reaches the stall at 5am, she'll heat up the dishes and prepares Kway (rice noodle sheets), ready to serve customers at 6am.

Pick from the huge pot filled with braised good stuff - pork, pork skin, intestines, preserved vegetables, tofu, Tau Kwa, etc. Tell her what you like, and Ah Mah will swiftly pick and snip the pieces into bite sizes with scissors. Despite her age, she's still good at her Math; she can total up your bill mentally without using a calculator!

It's a blessing that her sons are helming the business and keeping the treasured heritage alive. The cooking process is tedious, especially cleaning and washing the innards thoroughly to remove odour. Come savour the dish and pay Ah Mah a visit at the stall!
