Eggplant Rolls with Cream Cheese
Servings: 1

INGREDIENTS
1 eggplant
1 teaspoon olive oil
Prosciutto, as needed
A
200g cream cheese (at room temperature)
1/2 clove garlic (minced)
50g parsley (chopped)
20g walnuts (chopped)

PREPARATION
1. Mix all of the ingredients A in a bowl. Season with salt & pepper.
2. Slice the eggplant thinly. Put some olive oil in a pan and cook both sides of eggplant slices until done.
3. Place some prosciutto and (1) on each eggplant slice and roll up.
4. Enjoy!
