Salt and pepper, as needed
Oil (for frying)

PREPARATION
1. Rinse potato skins well and pat dry with paper towels.
2. Deep fry potato skins in the oil (160C/320F) until crispy.
3. Season the fried potato skins (2) with salt and pepper.
