INGREDIENTS For the sourdough:2 tsp Dry yeast1 cup water (warm)1 tsp sugar4 tbsp flourMix and leave in warm place overnight For the cake1 cup pumpkin pure 1 cup sugar1/3 cup olive oil Zest from an orange or two1 tsp cardamom 1 tsp mastic1 tsp mahlab if available 1kg (2lbs) flour added little by littleMix, knead and keep in warm place for 2-3 hoursKnead again and decorate according to your taste (you can use nuts, grains, it's your choice)Bake at 200 C for 40 minutes
