GREEK VEGAN New Year Cake - Vasilopita

INGREDIENTS

For the sourdough:
2 tsp Dry yeast
1 cup water (warm)
1 tsp sugar
4 tbsp flour

Mix and leave in warm place overnight

For the cake
1 cup pumpkin pure
1 cup sugar
1/3 cup olive oil
Zest from an orange or two
1 tsp cardamom
1 tsp mastic
1 tsp mahlab if available
1kg (2lbs) flour added little by little

Mix, knead and keep in warm place for 2-3 hours

Knead again and decorate according to your taste (you can use nuts, grains, it's your choice)

Bake at 200 C for 40 minutes
