Grilled Eggplant
Servings: 2

INGREDIENTS
2 eggplant
2 tablespoons vegetable oil

2 tablespoons noodle soup base (aka Mentsuyu)
1 teaspoon grated garlic
1 egg yolk
Chopped scallions, as needed

PREPARATION
1. Remove the top and cut the eggplant vertically into halves. Make shallow cuts (diamond cuts) on eggplant pieces.
2. Put the vegetable oil in a pan. Cook the eggplant (1) on medium heat until golden.
3. Add mentsuyu and grated garlic (A) into the pan and simmer.
4. Place the eggplant with sauce (3) on a plate. Put the egg yolk on top. Sprinkle some chopped scallions.
5. Enjoy!
