Healthy Potato Chips in Microwave - How to Make Homemade Potato chips!

Healthy potato chips in microwave are possible! And these chips (or some call crisps) made in the microwave are healthier for you than store bought chips. You will see how easy it is to make this natural, whole food snack as an alternative to eating store bought, processed ingredient-full chips. And its just the right amount so that you wont overdo it and eat too many! The reason these chips are healthier is the EXCLUSION of inflammatory oils that are man-made and processed like canola or vegetable oil. The abundance of processed oils in our foods by the food industry has pushed the balance of Omega 6s to Omega 3s in many of our bodies waaaay out of whack. A lot of us need way more Omega 3s and much, much less Omega 6s. Remember that all fats are not bad as long as you stick to healthy fats. Thats why for these crisps you should select a heart healthy oil like olive oil, avocado oil or melted coconut oil. These chips also have way less oil than chips cooked in a large vat of oil!

Steps
1. Using a mandoline or a kitchen knife, slice one half of a washed potato into no thicker than 0.25 cm thick slices. Half a potato using 0.25 cm slices should get you about two batches in the microwave. If youre using a mandoline, DO NOT EVER grip the food with your hand. ALWAYS use the safety grip to hold the food! A few extra slices of food are NOT worth a trip to the hospital!!!
2. Place the slices in a bowl with cold water and ice for 3 minutes. This will remove the starch.
3. Place the slices in a single layer on a kitchen towel or paper towels, then dry them by placing another kitchen towel or paper towels on top so that both sides dry. Dry slices are essential to getting a crisp chip.
4. Line a microwave safe plate with a piece of parchment paper. If you want to know a trick to get parchment paper to lay flat, just crumble it up into a ball then flatten it out!
5. Line the parchment paper with a single layer of the potato slices. Be sure not to overlap any.
6. Using a pastry brush, cover each slice with a thin layer of a heart healthy oil (olive oil, avocado oil or melted coconut oil are my recommendations).
7. Flip over the slices and apply the oil to the other side of the slices.
8. Sprinkle some kosher salt on the slices, as well as any other spices you might like.
9. Start cooking the first side in the microwave. My microwave is only 900 watts, so I started with two minutes with 0.25 cm thick slices but found I needed a little over 3 minutes until I saw the first side being cooked. Adjust the time based on the power of your microwave AND the thickness of your slices (thinner slices = less time), just remember you can always add MORE time but if you go too long youll burn them.
10. When they just start to look cooked on the first side, then flip them over to the other side and cook 2 minutes longer (again, adjust time based on the power of your microwave and the thickness of your slices).
11. Theyre done when you can see that theyve browned and there are no longer squishy parts. Let them cool before eating the hot oil will continue to cook the chips a little more as they cool.
Thats it! Note that if you do too many batches, then the time to do all of them will just add up to be too much so you should consider making these homemade potato chips in the oven instead. This way youll be able to do larger batches in less time than several rounds in the microwave. But maybe its a good thing that youd only 1 (or maybe 2 ) servings!
