Homemade Elderflower Cordial Recipe - The Happy Pear

Here's our delicious elderflower cordial recipe. The sun is out the Elderflowers are in season, why not head out to the countryside and pick some of these beautiful fresh elderflower and spend the days making some Homemade Elderflower Cordial. This is a great one to make for the family or to give as a gift. Release your inner scavenger and go pick your own food. :D

Elderflower Cordial

10 large heads of elderflower
1 x 450ml jar of honey
250ml of boiling water
1 lemon
1 orange
1 x thumb sized piece of ginger

Pick off any insects and little creatures you see off the elderflowers! Use the back of a fork to remove the flowers from the stalks into a large bowl.

Boil the kettle and add 250 ml of boiling water to the elderflowers. Zest the lemon in on top and then squeeze the juice from the lemon and the juice from the orange. Leave to cool down for about 5 mins - once cold add in the full jar of honey, mix well and leave to brew over night.

In the morning strain through a muslin cloth or fine sieve to finish your elderflower cordial!


Should keep for about 1 months in the fridge


Selecting the best blooms There will be only about 3 weeks of flowers the scent is there to attract insects to pollinate; it wont be released until the flowers are fully open. Equally you dont want to wait until the heads have begun to discolour they should be white, not cream or with any brown flowers and they should not fall too readily when shaken. The main crop is the most fragrant. It must be a dry day when you pick or rogue yeasts develop with a distinct whiff of cats pee. The blooms should smell of lemon.
