This recipe will make two one quart mason jars worth. First, add 2 tablespoons KOSHER salt (very important to use kosher salt, do NOT use iodized salt) to 1 quart filtered water. Boil the water so that the salt will dissolve then cool to room temperature.
You will need to use wide mouthed quart sized mason jars with a DIY fermentation sealing lid system. Before you start, scrub your hands down with soap and water really well. Peel and chop about 2 pounds of carrots into sticks about 3 3.5 in length. Peel then crush 4-6 cloves of garlic, 2-3 per jar. First add the garlic to the jar, then add the spices. Try not to use powdered spices, stick to full seed spices like dill seed, coriander seed, etc. You can also add a small bunch of fresh herbs such as dill or cilantro. Next add the carrot sticks vertically so that you can fit as many as possible. Cover the vegetables with the brine completely but be sure to leave 1-2 inches air space at the top. Then put the weight on top of the carrots and add the sealing lids. Use a clean pair of tongs to put the weight in in order to minimize germs. Ideally store in a cool dark place, the carrots should take about 2 weeks to finish fermenting.
When it comes time to open and test the jar, use a clean pair of tongs to remove the weight and the carrot. If you see a film and white spots on top of the jar that is natural and ok, just use a spoon to skim it off and discard it. If you see a variety of colors with big fuzzy patches, that is likely mold that is not good for you so you should discard your batch to be safe. Taste is the final judge if it tastes bad throw it out. If your carrots arent yet done, put the weight back using the tongs, reseal the jar with your fermenting lid and then use the pump 2-3x to pump out the oxygen.
When your carrots are done fermenting, remove the fermentation lid, replace with the regular mason jar lid and store in the fridge.
