How To Make Broccoli Beef Over Rice Rockin Robin Cooks

Try this broccoli beef over rice or cauliflower rice for less carbs. The sauce is delicious and it's easy to make!

Ingredients:
1 lbs sirloin beef, sliced into thin strips wide by 1 inch
4 cups broccoli florets
3 carrots, thinly sliced
yellow onion, cut into 1 inch pieces
2 Tbsp sesame seeds, toasted
2 Tbsp. coconut sugar
1 Tbsp. garlic, minced (3 cloves)
2 tsp. Ginger, minced
cup coconut aminos
tsp. Sesame oil
1 Tbsp. plus 1 tsp of cornstarch
2 Tbsp. beef broth
2 Tbsp. rice vinegar
Coconut oil

Directions:

First make the marinade. Combine in a bowl the coconut aminos, the cornstarch, the sugar, beef broth, rice vinegar, garlic, and the ginger. Whisk this until everything is dissolved and well combined.

Preheat a large deep frying pan or wok over medium high heat. Add 1 tsp. of coconut oil and then add the sirloin using tongs so as to leave the marinade behind in the bowl.

Cook the meat stirring frequently for about 5 minutes and then add the rest of the marinade to the pan. Continue cooking over medium heat for another minute or until the beef is no longer pink.

Pour the beef into a clean bowl and set it aside and keep it warm.

In the same pan, add 1 to 2 Tbsp. of coconut oil to the pan over medium high heat and add the broccoli, carrots and onion to the pan. Stir Fry for 3 - 4 minutes and then drizzle in the sesame oil.

After 5 to 6 minutes of cooking the vegetables, test the broccoli for doneness by inserting a fork. When its almost done, add the beef back to the pan.

Add the lid to the pan for 1 minute to cook the broccoli a bit more.

You can cook up some rice, cauliflower rice, or even zoodles and serve this broccoli beef over the top!

Sprinkle the toasted sesame seeds over the top and enjoy!
