I was motivated by reading the ingredient list. I don't want to feed my family monosodium glutamate, tons of sodium and a bunch of preservatives.This recipe tastes so good and full of flavor, the canned stuff doesn't compare. Here are the ingredients:1 lb. mushrooms, any kind but I used white button in the video1 1/2 cups of yellow onion, diced1 large stalk of celery1 carrot (about 1/2 cup) grated2 Tbsp butter3 Tbsp olive oil1 1/3 cup half and half1 1/2 cups chicken broth1 tsp. dried thyme1/2 tsp. dried basil1/2 garlic powder1 tsp. saltDirections:Saute the onion, celery, and carrots in the butter and olive oil for about 5 minutes. Then add the mushrooms, thyme, basil, garlic powder, salt and a little pepper.Cook this mixture on medium heat until the mushrooms give off their liquid and the liquid evaporates, about 15 to 18 minutes.If you want you can continue to cook the mixture until the mushrooms really brown up, (an additional 10 minutes or so). This will bring out an even richer flavor to your soup but it takes longer. If you have the time, do it.Let the mixture cool before placing it in a blender. Add the chicken broth and puree until smooth. This will give your soup the body and thickness you will love, without having to add a lot of fat.Once pureed, pour the soup back into the frying pan and add the half and half over medium heat.
