Once you see how easy it is to make homemade cream of mushroom soup from scratch, you will never buy the canned Campbells soup again.

I couldn't bring myself to buy another can when I figured out how to make my own soup from scratch.

I was motivated by reading the ingredient list. I don't want to feed my family monosodium glutamate, tons of sodium and a bunch of preservatives.

This recipe tastes so good and full of flavor, the canned stuff doesn't compare.

Here are the ingredients:

1 lb. mushrooms, any kind but I used white button in the video
1 1/2 cups of yellow onion, diced
1 large stalk of celery
1 carrot (about 1/2 cup) grated
2 Tbsp butter
3 Tbsp olive oil
1 1/3 cup half and half
1 1/2 cups chicken broth
1 tsp. dried thyme
1/2 tsp. dried basil
1/2 garlic powder
1 tsp. salt

Directions:

Saute the onion, celery, and carrots in the butter and olive oil for about 5 minutes. Then add the mushrooms, thyme, basil, garlic powder, salt and a little pepper.

Cook this mixture on medium heat until the mushrooms give off their liquid and the liquid evaporates, about 15 to 18 minutes.

If you want you can continue to cook the mixture until the mushrooms really brown up, (an additional 10 minutes or so). This will bring out an even richer flavor to your soup but it takes longer. If you have the time, do it.

Let the mixture cool before placing it in a blender. Add the chicken broth and puree until smooth. This will give your soup the body and thickness you will love, without having to add a lot of fat.

Once pureed, pour the soup back into the frying pan and add the half and half over medium heat. Bring to a simmer for 10 minutes and serve. Enjoy!
