How to make Cucumber/Avocado Sushi Rolls with my Kid

The word "sushi" actually means "seasoned rice" and NOT raw fish. It is of course, commonly paired with fish or in this case, we use cucumber and avocado.
We will be posting an episode on how to prepare "sushi rice" very soon, so make sure you check it out.

What you will need.
Sushi rice (short grain) the rice is nice and sticky when you cook it.
bamboo matt
nori
sesame seeds (optional)
kombu (optional)
seran wrap (this usually helps the nori or rice from sticking the the mat. But be careful not to wrap up the plastic wrap into your roll. I actually did this by accident. :-)

2 cups sushi rice
kombu (optional) Kombu is a sea vegetable and it gives the rice an umami flavor, but this step is not as necessary.
nori sheets (seaweed)
cucumber, cut into spears
avocado, cut into slices
black sesame seeds, about a 1/2 teaspoon, sprinkled over the rice

To prepare your rice:
Make sure you rinse the rice several times until the water runs clear and not cloudy. Then soak for about 20-30 minutes.
Bring 2 cups of sushi rice to a boil and if you're using the kombu, place it over the rice when cooking. Once rice comes to a boil, turn it to simmer, place a kitchen towel over the top and then secure it by covering with a lid. The towel will give it a nice seal. Also, fold the towel over the lid so it does not drape down, close to the flame.
Simmer for 10 minutes. Yup... that's it!!! no need for any longer.

While the rice is simmering mix 2 tablespoons of sugar with 2 teaspoons of salt and 2 tablespoons of seasoned rice vinegar. whisk it together until its all combined.

After the rice is cooked, pour it into a wooden bowl and drizzle the seasoned vinegar. With a wooden or plastic spoon, make lines in the rice to cool it off. Just don't flatten it out. Keep the beautiful integrity of the rice, whole.

cut a piece of plastic wrap and put it around the bamboo mat. Then place the nori. Now gently spoon over some rice and gingerly spread equally over the nori. Leave a little room at the top edge so you can seal it by running your finger over the top with cold water. This will act as an adhesive once you've rolled up your sushi roll.

Add whatever ingredients you can imagine. Have fun with it and change it up each time.
Sushi is great on its own or even dipped in soy sauce and shared with pickled ginger.
