How to make FAST Vienamese noodles with pork rib

This recipe has NO FISH SAUCE, but only because I like it without. If you like fish sauce, you can and should add it!

1. Prepare noodles of your choice in boiling water per package directions. I used linguini, not because I like it, but because it's what we had. Add an egg about 10 minutes from the end of cooking, and chopped mushrooms about 5 minutes from the end if you like those included.
2. Chop roasted peanuts finely and set aside.
3. Roughly chop cucumber, hungarian wax pepper, green onions and cilantro and set aside.
4. Prepare a sauce with high-quality extra-virgin olive oil, rice vinegar, sugar and salt.
5. Drain and arrange the noodles. Top with vegetables, cold or hot roasted pork rib, sauce, egg and squeeze lemon juice over the top.

I used a medium-mild hot type of pepper that my garden is throwing out this week: hungarian wax pepper. If you are using a more spicy type of pepper like jalapeno (medium-hot) or thai chilis (hot) remember: the hotter it is, the smaller you should chop it - and the less total pepper you should use!
