How to make SUSHI RICE with a cute kid by your side

Sushi rice is a short grain rice that looks somewhat round.

Make sure you rinse the rise thoroughly. The water should run clear and not look murky.

Here is how we made our rice.

1 Cup sushi rice
2 1/2 cups water
strip of Kombu or sea vegetable (optional)
2 tablespoons rice vinegar
2 tablespoons sugar
2 teaspoons salt

Rinse rice and let the rice soak for about 30 minutes.

Add rice to a pot, add water and Kombu, if using and bring to a boil. Bring to a simmer and cover top of pot with a kitchen towel, then a lid and wrap the towel over the lid. This will create a tighter seal.

Simmer of ONLY 10 minutes. Yup, 10 minutes! No need to cook any longer, the sushi rice will be perfect after 10 minutes.

While the rice is simmering, combine the vinegar, sugar and salt and mix well.

Once the rice is finished pour into a wooden bowl, sushi oke, or even a wooden cutting board. Let it cool for a few minutes and pour over the vinegar mixture.

The rice is great on its own or add your favorite toppings. I like soy sauce and furikake. And of course, use it to create different sushi rolls. Did you know that Sushi means "seasoned rice" and NOT raw fish?
