How to Make a Chopped Cheese Sandwich with Bread & Butter Pickles | At Home With Us | Food52

Romel Bruno is back in his Seattle kitchen to cook up his take on a classic chopped cheese sandwich. He's swapping American cheese for gouda (it's a really good cheese for melting), seasoning the beef with sazón, and making homemade bread and butter pickles for that added crunch (also great for snacking). INGREDIENTS
2 cups apple cider vinegar
1/2 yellow onion (sliced thinly)
1 teaspoon yellow mustard seeds
1 teaspoon black mustard seeds
1/3 cup granulated sugar
1/3 cup kosher salt
1 teaspoon whole cloves
1 teaspoon turmeric powder
2 dried bay leaves
8 Kirby cucumbers (sliced into thick coins)

Chopped Cheese
1 tablespoon beef tallow or canola oil
1/2 yellow onion (sliced thinly)
Salt and pepper, to taste
1 pound ground beef
1 tablespoon garlic powder
1 tablespoon onion powder
1 packet Goya Sazón or Adobo seasoning
2 to 3 slices of your favorite cheese (American cheese is a standard for this sandwich)
Bread of your choice (a nice crusty roll would be nice )
Lettuce and tomato, for serving
