Insanely Crispy Japanese Fried Chicken (Chicken Kaarage) | Joshua Weissman

I'm sure we are all very familiar with fried chicken at some level. Now Japanese fried chicken is similar but also very different. It's a completely gluten free fried chicken since it's traditionally fried using corn starch as the dredge for the chicken. It has a thin and ultra crispy crust with intensely flavored marinated chicken underneath and is traditionally served with a mayonnaise or aioli for dipping. INSANELY good and INSANELY easy to make.

Ingredients you'll need -
Marinade:
2 tablespoons Gochujang
2 tablespoons tamari or soy sauce
2 tablespoons honey
2 tablespoons rice wine vinegar
1 tablespoon mirin (sweet rice cooking wine)
3 cloves fresh garlic, grated
1 teaspoon fish sauce

For the Chicken:
1.5 pounds skinless and boneless chicken thighs (cut into 1.5 inch pieces)
Corn starch for dredging
frying oil (you can use any high temperature frying oil you want. I used a mix of lard and avocado oil.)
