Italian Frittata | Cooking with Napolina

This Italian Frittata is the perfect solution for a lunch or light main meal.


2 tablespoons Napolina Light in colour Olive Oil
1 large red onion, finely chopped
2 cloves garlic, finely chopped
200g cherry tomatoes, halved
100g ricotta cheese
120g Napolina Green Olives, halved
8 eggs, whisked
Handful basil leaves, finely chopped
Salt and black pepper
