Not everyone is a fan of Karela, but this simple recipe could make them one. Try it out. KARELE KI SABZIIngredients8 small bitter gourd (karela)1 tablespoon oil + for deep-fryingSalt to taste2 medium onions, sliced1 teaspoon red chilli powder1 teaspoon coriander powder½ teaspoon dried mango powder (amchur)Rotis for servingMethod1. Discard the stem and bottom of bitter gourds. Scrape them and reserve the scrapings. 2. Halve the bitter gourds vertically and discard the seeds. 3. Heat sufficient oil in a kadai. 4. Add salt to scrapings and mix well. Add salt to bitter gourd halves and rub well. 5. Squeeze out excess water from the bitter gourd halves and deep-fry in hot oil on high heat for 1 minute. Reduce heat and continue deep-frying till golden brown and crisp. Drain on absorbent paper.6. Heat 1 tablespoon oil in a non-stick pan. Add onions and sauté till golden brown. 7. Squeeze out excess water from the reserved scrapings, add to sautéed onions and sauté for 1 minute.8. Add fried bitter gourds, salt, chilli powder, coriander powder and dried mango powder, mix and cook on low heat for 2 minutes. 9. Serve hot with rotis.
