Kashmiri Mutton Yakhni is a traditional mutton or lamb dish that is part of Kashmiri Cuisine i.e. both Kashmiri day to day cooking and the Wazwan. Yakhni is simple and easy to cook but at the same time requires perfection. Although in Wazwan this yogurt based yakhni consists of big round meatballs called the 'Ghostaba' whereas in homes the yakhni is made using whole mutton pieces simmered in yogurt gravy until the meat is tender & the gravy is thick enough. The base for yakhni is lightly fried onions cooked in yogurt and made flavorful using a lot of cinnamon and green cardamoms and then in the end topped up with some dried mint leaves.
