Dr. Vanitha Rao Pangal - Kilikoodu

KILIKOODU

Ingredients

2 large potatoes, boiled, peeled and mashed
1 tablespoon oil + for deep-frying
1 medium onion, chopped
1½ medium carrots, chopped
2-3 green chillies, finely chopped
1 tablespoon ginger-garlic paste
¼ teaspoon red chilli powder
¼ teaspoon garam masala powder
½ teaspoon turmeric powder
¼ teaspoon black pepper powder
Salt to taste
2 eggs
Broken vermicelli for coating

Method

1. Heat 1 tablespoon oil in a non-stick pan. Add onion and sauté for a minute.
2. Add carrot, mix and sauté for a minute. Add green chillies and ginger-garlic paste, mix and sauté for 1-2 minutes.
3. Add chilli powder, garam masala powder, turmeric powder, pepper powder and salt, mix well and sauté for 2-3 minutes.
4. Add potatoes, mix well and cook for a minute. Remove from heat and cool.
5. Break eggs in a bowl and beat well.
6. Divide the mixture into equal portions and shape them into medium size balls.
7. Dip the balls in the beaten eggs, coat with the vermicelli and shape them in an oblong manner to get kilikoodus.
8. Heat sufficient oil in a kadai. Deep-fry kilikoodus till golden and crisp. Drain on absorbent paper.
9. Serve hot.
