LEMON CRANBERRY POUND CAKE RECIPE

INGREDIENTS

40 ml freshly squeezed lemon juice

1 tablespoons rum or brandy

1/2 cup dried cranberries, coarsely chopped

230 grams all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon Salt

1 tablespoons grated lemon zest (outer yellow skin of lemon)

1.5 cups (300 grams) granulated white sugar

1/2 cup (115 unsalted butter, at room temperature)

3 eggs, at room temperature

1 teaspoons pure vanilla extract

1.5 cup curd, sour cream or plain yogurt

1/3 cup candied mix peel / tutti fruity (optional)
