LOBSTER TAGLIATELLE

COOK TIME: 20 MINUTES
SERVES: 4

INGREDIENTS
7 lobsters, de-shelled.
250g tagliatelle pasta
1 medium red onion
4 cloves of garlic, minced.
1 small ginger, grated.
6 cherry tomatoes, halved.
3 medium tomatoes, blended.
1 tbsp scotch bonnet pepper, blended.
50ml cooking cream
4 fresh basil leaves
1 cube shrimp seasoning
1 tbsp olive oil
Salt

DIRECTION
Bring water to a boil, add tagliatelle pasta, olive oil, let cook for 6 minutes, drain and set aside.
De- shell the lobsters, cut into pieces and set aside.
Heat olive oil in a pan over medium heat, add onion, garlic, ginger, stir and let sweat for minute.
Add cherry tomatoes, stir and let simmer for 2 minutes, add tomatoes puree, stir , add blended pepper and let simmer for down for 5 minutes.
Add salt, cooking cream, stir and throw in basil leaves.
Add lobsters, shrimp seasoning, stir and let simmer for 2 minutes.
Add cooked tagliatelle pasta, mix to coat pasta well.
Adjust salt to your taste.
Serve hot.
