Luncheon Meat Jeon (Korean Pancake)
(2 servings)

INGREDIENTS
1 can of luncheon meat
[A] 2 eggs
[A] 10g chopped green onions
[A] Salt and pepper, to taste
1/4 onion, finely chopped

PREPARATION
1. Take the luncheon meat out of the can and cut it into 1.5cm-wide pieces.
2. Hollow out the center of each luncheon meat slice to create a small square pocket. Chop the removed parts into coarse pieces.
3. In a bowl, mix the chopped ingredients from step 2, finely chopped onion, and ingredients [A] thoroughly.
4. Arrange the prepared luncheon meat slices in a frying pan. Pour the mixture from step 3 into the pockets of the luncheon meat slices.
5. Cook over medium heat until the egg mixture is set and both sides are well-browned.
6. Once the egg is cooked, your Luncheon Meat Jeon is ready
