Malai Kofta Curry | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

This low calorie version of Malai kofta curry by Chef Siddharth is as good as the original.

MALAI KOFTA CURRY

Ingredients

Fresh mint sprigs for garnishing
Kofta
2 medium sweet potatoes, boiled, peeled and grated
2 medium raw bananas, boiled, peeled and grated
½ cup grated cottage cheese
1-2 green chillies, finely chopped
1 teaspoon red chilli powder
½ teaspoon garam masala powder
Salt to taste
1 tablespoon raisins
1 tablespoon pistachios
Oil spray for spraying
Curry
2 medium onions, pureed
2 medium tomatoes, pureed
1 tablespoon olive oil
1 tablespoon ginger-garlic paste
1 teaspoon garam masala powder
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder
½ medium cauliflower, boiled and pureed
1 cup pumpkin puree
Salt to taste
1 tablespoon fresh cream + for drizzling

Method

1. Preheat an air fryer to 180̊ C.
2. To prepare kofta, take sweet potatoes in a bowl. Add raw bananas, cottage cheese, green chillies, chilli powder, garam masala powder, salt and raisins.
3. Finely chop pistachios, add and mix well.
4. Divide the mixture into equal portions and shape into balls.
5. Grease the basket of air fryer with some oil spray. Place the koftas and spray some oil spray on top.
6. Place the basket into the preheated air fryer and air fry for 15-18 minutes.
7. To prepare curry, heat olive oil in a non-stick pan. Add ginger-garlic paste and sauté for 30 seconds.
8. Add onion puree and sauté for 1-2 minutes. Add tomato puree and sauté for 1-2 minutes.
9. Add garam masala powder, turmeric powder, chilli powder and coriander powder, mix well and sauté for 1 minute.
10. Add cauliflower puree and pumpkin puree, mix and cook for 2 minutes.
11. Add some water, mix and cook for 1-2 minutes. Add salt and mix. Add cream and mix well.
12. Transfer curry in a serving bowl. Place the air fried koftas and drizzle some cream.
13. Serve hot garnished with few mint sprigs.
