Mapo Lotus Root
Servings: 2

INGREDIENTS
1/4 leek (chopped)
1 piece ginger (chopped)
2 teaspoons sesame oil
100g ground pork
200g lotus root (cut into small pieces)
A
1 tablespoon soy sauce
1 teaspoon sugar
1 tablespoon gochujang
100ml water
B
1 teaspoon potato starch
1 tablespoon water
Chopped scallions, as needed

PREPARATION
1. Put some sesame oil in a pan. Cook chopped leek and ginger over medium heat until fragrant. Add the pork. Add lotus root pieces when pork is done.
2. Add all of the ingredients A into the pan. When boiled, add B (potato starch and water). Simmer over medium heat until thicken. Add chopped scallions on top.
3. Enjoy!
