Masala Dum Ghost
Recipe in English:

Ingredients:
-Til (Sesame seeds) ½ tbs
-Badam (Almonds) 5
-Khopra (Desiccated coconut) 1 tsp
-Beef/Mutton mix boti 750 gms
-Dahi (Yogurt) whisked 1 Cup
-Lemon juice 2 tbs
-Namak (Salt) 1 tsp or to taste
-Kacha papita (Raw papaya) paste 1 & ½ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Khashkhash (Poppy seeds) grinded 1 & ½ tsp
-Dhania powder (Coriander powder) 1 tsp
-Jaifil powder (Nutmeg powder) ¼ tsp
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 tbs
-Garam masala powder 1 tsp
-Haldee powder (Turmeric powder) ¼ tsp
-Oil ¼ Cup or as required
-Pyaz (Onion) sliced 1 large
-Pani (Water) ½ Cup or as required
-Koyla (Charcoal) for smoke

Directions:
-In spice mixer,add sesame seeds,almonds and desiccated coconut,grind well & set aside.
-In bowl,add beef mix boti,yogurt,lemon juice,salt,raw papaya paste,ginger garlic paste,poppy seeds, grounded mixture,coriander powder,nutmeg powder,red chili powder,cumin powder,garam masala powder and turmeric powder,mix well & marinate for 4-6 hours or overnight.
-In pot,add oil and onion,fry until light golden.
-Now add marinated beef,mix well & cook on high flame for 5 minutes.
-Add water and mix,cover and cook on low flame until meat is tender (approx.1 hour).
-Give a coal smoke for 3 minutes.
-Garnish with fresh coriander & serve.

Ajza:

Directions:
-Spice mixer mein til,badam aur khopra dal ker ache tarhan grind karein & side per rakh dein.
-Bowl mein beef mix boti,dahi,lemon juice,namak,kacha papita paste,adrak lehsan paste,khashkhash, grounded mixture,dhania powder,jaifil powder,lal mirch powder,zeera powder,garam masala powder aur haldee powder dal ker ache tarhan mix karein & 4-6 hours ya overnight marinate ker lein.
-Pot mein oil aur pyaz dal ker light golden fry ker lein.
-Ab is mein marinated beef dal ker ache tarhan mix karein aur 5 minutes kliya tez ancch per paka lein.
-Pani dal ker mix karein aur dhak ker halki ancch per ghost gul janay tak paka lein (approx.1 hour).
-3 minutes kliya koyla ka dhuwan dein.
-Hara dhania sa granish ker ka serve karein.
