Miso Eggplant with Doubanjiang
1 serving

INGREDIENTS
1 large eggplant
2 tablespoons salad oil
A:
1 teaspoon miso paste
1 teaspoon doubanjiang (Chinese chili bean paste)
1 teaspoon soy sauce
1 teaspoon sugar
B:
Some green onions, finely chopped
Some white sesame seeds

PREPARATION
1. Cut the eggplant in half and make a crisscross pattern on the inside.
2. Heat the salad oil in a frying pan over medium heat and grill both sides of the eggplant until golden brown.
3. Arrange the grilled eggplant in a heatproof dish and brush it with the mixture of ingredients A.
4. Place the dish in a toaster oven and bake for about 12 minutes until the surface is nicely browned. Finish it off by sprinkling with chopped green onions and white sesame seeds.
