Mojito flavored creamy mousse is a must try !

MOJITO MOUSSE

Ingredients

1 lemon, cut into wedges
1 teaspoon lemon juice
20-25 fresh mint leaves + for garnishing
1 tablespoon gelatin
¼ cup condensed milk
½ cup whipped cream

Method
1. Boil 2 cups water in a non-stick pan.
2. Mix water and gelatin in a bowl, place the bowl in the pan and stir till the gelatin dissolves in water. Cool to room temperature.
3. Put some mint leaves and lemon wedges in another bowl. Muddle with muddler.
4. Strain liquid to the 3rd bowl and add gelatin.
5. Mix condensed milk and whipped cream in the 4th bowl, gradually gelatin-lemon mixture and mix well.
6. Tear remaining mint leaves and add alongwith lemon juice. Mix well.
7. Transfer the mixture into a piping bag and pipe out the mousse in individual shot glasses and tap lightly. Keep in the refrigerator till set.
8. Garnish with mint leaves and serve chilled.
