A twist to the popular dhokla recipe from the Gujarati cuisine. This one is made with moong dal and is super healthy.MOONG DAL DHOKLAIngredients2 cups split skinless green gram (moong dal), soaked for 2 hours1-2 green chillies, finely choppedSalt to taste¼ teaspoon turmeric powder¼ cup gram flour½ cup yogurt1 teaspoon castor sugar2 tablespoons oil + for greasing1½ teaspoons fruit soda 1½ teaspoons mustard seeds1½ teaspoons white sesame seeds1 teaspoon asafoetidaChopped fresh coriander leaves for garnishingFresh scraped coconut for garnishingGreen chutney for servingMethod1. Grind the drained green gram alongwith half the green chillies and ½ cup water to make a smooth and semi-thick mixture. Transfer in a bowl.2. Add salt, turmeric powder, gram flour, yogurt and castor sugar and mix well.3. Heat sufficient water in a dhokla steamer and bring to boil. 4. Grease the dhokla mould with some oil. 5. Add 1 tablespoon oil to the batter and mix, Add fruit soda and mix well. 6. Pour the batter into the greased mould filling ¾th, place in the hot steamer, cover and steam for 10-12 minutes. Remove from steamer and cool.7. To prepare tempering, heat 2 tablespoons oil in a non-stick tempering pan. Add mustard seeds and let it splutter. Add sesame seeds, remaining green chillies and asafoetida. 8. Pour the tempering over the steamed dhokla, spread and set aside to cool.9.
