Pasta Flora, a Greek jam tart dessert

Pasta Flora is a traditional Greek jam tart recipe that is so easy to make! Ingredients:
1 cup unsalted butter
cup sugar
1 large egg
1 egg yolk
grated zest of 1 lemon
1 tbsp cognac
tsp vanilla powder or tsp vanilla extract
3 cups self-raising flour (cake & pastry flour)
500 ml apricot jam
