Kashmiri Tadka twist presents a perfect way of making homemade schezwan sauce for all Hakka Chinese food lovers. Schezuan sauce or chutney is a spicy pungent sauce which is made mainly from red chilies , garlic and ginger and lots of oil . This sauce is used mostly in Indo-Chinese/ Hakka food. Written Recipe:Ingredients: Kashmiri Red Chili (Whole) – 10-15Oil – 5 to 6 tbspChopped Garlic – 3 tbspChopped Ginger – 2 tbspVinegar – 1 tbspSoy Sauce – 1 tbspBlack Pepper Powder – 1 tspSalt – 1 ½ tspSugar – 1 tspKetchup – 2 tbspWater – ¼ cupMethod:1. Soak Kashmiri Red Chili - 3 - 4 Hours2. Then grind into a fine paste and keep aside3. In a Pan, heat oil and add chopped ginger and garlic4. Fry until turn golden brown5. Add Red chili paste and sauté until oil oozes( ~3- 4 min)6. Add Soy sauce, pepper powder, vinegar, salt, sugar, ketchup . Fry for ~1 -2 min7.
