Quick & Easy Schezwan (Szechuan) Sauce | Schezwan Chutney | Kashmiri Tadka Twist

Kashmiri Tadka twist presents a perfect way of making homemade schezwan sauce for all Hakka Chinese food lovers. Schezuan sauce or chutney is a spicy pungent sauce which is made mainly from red chilies , garlic and ginger and lots of oil . This sauce is used mostly in Indo-Chinese/ Hakka food.
Written Recipe:

Ingredients:

Kashmiri Red Chili (Whole) – 10-15
Oil – 5 to 6 tbsp
Chopped Garlic – 3 tbsp
Chopped Ginger – 2 tbsp
Vinegar – 1 tbsp
Soy Sauce – 1 tbsp
Black Pepper Powder – 1 tsp
Salt – 1 ½ tsp
Sugar – 1 tsp
Ketchup – 2 tbsp
Water – ¼ cup

Method:

1. Soak Kashmiri Red Chili - 3 - 4 Hours
2. Then grind into a fine paste and keep aside
3. In a Pan, heat oil and add chopped ginger and garlic
4. Fry until turn golden brown
5. Add Red chili paste and sauté until oil oozes( ~3- 4 min)
6. Add Soy sauce, pepper powder, vinegar, salt, sugar, ketchup . Fry for ~1 -2 min
7. Add water and cook well until you get the saucy consistency.

Szechuan sauce is now ready.
