Quick-Soak Radish Ribbons

INGREDIENTS
Radish: 300g
[A] Water: 400ml
[A] Salt: 2 teaspoons
[B] Ponzu Soy Sauce: 2 tablespoons
[B] Sugar: 1 tablespoon
[B] Concentrated Mentsuyu (3 times): 1/2 tablespoon
[B] Sesame Oil: 1 teaspoon

PREPARATION
1. Peel the radish and cut it into 2-centimeter thickness.
2. Place chopsticks on top and bottom of the radish, make incisions at 5-millimeter intervals. Flip it, rotate 45 degrees, and make similar incisions.
3. In a bowl, combine [A], add the radish from step 2, soak for about 10 minutes, then drain excess moisture.
4. In a storage container, combine the radish from step 3 and [B]. Let it marinate in the refrigerator for about 1 hour, and it's ready!
