RAJMA TOMATO SOUPIngredients ½ cup red kidney beans (rajma), soaked for 7-8 and boiled2 cups fresh tomato puree1 tablespoon olive oil1 teaspoon red chilli flakes1 teaspoon red chilli powderSalt to taste½ teaspoon castor sugar1 teaspoon dried oregano + for sprinklingBlack pepper powder to taste2 tablespoons fresh cream + for garnishingNachos for servingMethod1. Grind kidney beans to make a smooth puree. 2. Heat olive oil in a deep non-stick pan. Add ½ teaspoon chilli flakes and sauté for 10 seconds. Add ½ teaspoon chilli powder and sauté for 10 seconds.3. Add tomato puree and mix. Add kidney bean puree, mix and cook for 1-2 minutes. Add salt and castor sugar, mix and cook for 5-10 minutes.4. Add remaining chilli powder, remaining chilli flakes, dried oregano and pepper powder and mix. Add cream and mix well.5.
