RAJMA TOMATO SOUP

Ingredients

½ cup red kidney beans (rajma), soaked for 7-8 and boiled
2 cups fresh tomato puree
1 tablespoon olive oil
1 teaspoon red chilli flakes
1 teaspoon red chilli powder
Salt to taste
½ teaspoon castor sugar
1 teaspoon dried oregano + for sprinkling
Black pepper powder to taste
2 tablespoons fresh cream + for garnishing
Nachos for serving

Method

1. Grind kidney beans to make a smooth puree.
2. Heat olive oil in a deep non-stick pan. Add ½ teaspoon chilli flakes and sauté for 10 seconds. Add ½ teaspoon chilli powder and sauté for 10 seconds.
3. Add tomato puree and mix. Add kidney bean puree, mix and cook for 1-2 minutes. Add salt and castor sugar, mix and cook for 5-10 minutes.
4. Add remaining chilli powder, remaining chilli flakes, dried oregano and pepper powder and mix. Add cream and mix well.
5. Garnish with some cream, sprinkle some oregano and put some nachos on top and serve hot.
