No time for snack, lunch or breakfast? here is a super easy no fuss- jar salad. enjoy this anywhere and anytime without worrying about what to eat!SALAD IN A JAR Ingredients:¼ small red cabbage2-3 baby carrots, peeled1 English cucumber2 yellow cherry tomatoes2 red cherry tomatoes¼ cup thin strips of mixed capsicumsRed radish slices as required2 tbsps roasted pinenuts4-5 walnuts, roasted and roughly choppedDressing2½ tbsps Nutralite Veg Mayo1 tbsp mustard sauceSalt to tasteCrushed black peppercorns1 tbsp honey2 lemonsMethod1. Finely shred red cabbage, cut baby carrots into thick strips and halve cucumber lengthwise and then slice. Halve all the cherry tomatoes. 2. To make the dressing, put Nutralite Veg Mayo in a bowl, add mustard sauce, salt, crushed black peppercorns and honey. Halve the lemons and squeeze their juice directly into the bowl. 3. Layer some red cabbage, some cucumber, capsicums and red radish slices one over the other, drizzle a little dressing over them.4. Add some roasted pinenuts and walnuts and top with some cherry tomatoes and baby carrots.5. Sprinkle a little red cabbage and drizzle the dressing on top.
