Salt-Crusted Sea Bream
Servings: 2

INGREDIENTS
1 sea bream
1kg coarse salt
3 egg whites
2 kelps
Some wakame seaweed
Some sudachi citrus

PREPARATION
1. Remove fish scales. Remove guts from the fish and clean well.

2. Stuff wakame into the fish.

3. Mix salt and egg whites in a bowl.

4. Spread (3) onto a baking tray and place kelps. Place the fish (2) and wrap with
kelps. Cover completely with (3) and form a fish shape.

5. Bake (5) in the oven (200C) for 30 minutes. With a wooden hammer, break the
salt crust around the fish. Serve with sudachi citrus.

6. Enjoy!
