SINGAPORE HAWKER FOOD Hong Xing Fishball/Meatball Noodle (/) Hong Lim Food Centre

Its 3am, and Hong Lim Food Centre is silent. All shutters are down but one. Mr Kang, the second generation of Hong Xing Fishball Noodle, begins his preparations in the wee hours of the morning. His fishballs and meatballs are handmade, starting from blending fish paste using Yellowtail and Whitefin Wolf Herring. Looking at the pair of hands moving continuously and tirelessly, we appreciate the hard work of the hawkers.

Mr Kang started helping his father, who started the fishball noodle business in the 1960s, at a tender age of 14.

The stall specialises in simple, basic fishball noodles - no minced meat, no mushrooms, just fishballs and meatballs in soup, or whipped dry with noodles.

For a bowl of fishball/meatball noodles, they offer plenty. Their fishballs are bouncy and flavourful. The noodles are cooked al dente, perfect when mixed with their sauce blend of chilli, vinegar! For pork lard lovers, you will not be disappointed the sinful aroma of pork lard awaits you...
