Grouper's got this slightly sweet flavour that goes perfectly with the mildness of congeeit doesnt steal the show but adds just the right touch. Its taste is clean and delicate, and the flesh is firm yet tender, so it stays intact even when simmered in broth. This makes it perfect for congee, where you want the fish to hold up and not fall apart.

Ingredients:
Fish Marinade:
300g Grouper fillet
tsp White Pepper
tsp Salt
1 tbsp Shaoxing Wine
1 tbsp Corn Starch
1 egg white

Congee:
1 cup White Rice
6 cups Water
6-7 Dried Scallops
1 tsp Cooking Oil
15g sliced Spring Onion

Garnish (add to your liking):
1 Red Chilli
15g Coriander
2 tsp Bawang Goreng
1 tsp Roasted Sesame Oil
