Full recipe for the SOUR CHERRY JAMIngredients1 kg fresh sour cherry (farm picked, if possible)1 kg sugar fresh lemons juice (or 1/2 tsp citric acid)DirectionsSour Cherry trees bloom all over in the spring, Their little flowers create the illusion of beautiful pastel clouds along their branchesOh, and they have an amazing fragrance!PICKINGBy the summer, the cherries become ripe and ready for pickingThey must be picked carefully with their stems!Otherwise the tree wont grow more fruit from that stemSour Cherries should also place gently into shallow baskets instead of a deep buckedPREPARATIONWash and strain the Sour CherriesDiscard the stems and seedsPlace in a potPour 1 kg of sugar over the Sour CherriesCover the pot with a lid and rest for 3-4 hours or overnightCOOKINGSour Cherries will release their juice as they rest within the sugarSet the stove to medium-high cook until the Sour Cherry and sugar mixture boilsOnce the mixture begins to boil, cook for 15-20 minutes on medium heatThe bright-cherry colour of the Sour Cherry Jam is legendary!!So, the boiling time is very precise for Sour Cherry(!) Boil the mixture until the foam disappears and bubbles become transparent, not more than it is needed.
