SOUR CHERRY JAM: HOMEMADE & TRADITIONAL SUN-COOKING TECHNIQUE

Full recipe for the SOUR CHERRY JAM
Ingredients

1 kg fresh sour cherry (farm picked, if possible)
1 kg sugar
fresh lemons juice (or 1/2 tsp citric acid)

Directions

Sour Cherry trees bloom all over in the spring,
Their little flowers create the illusion of beautiful pastel clouds along their branches
Oh, and they have an amazing fragrance!

PICKING
By the summer, the cherries become ripe and ready for picking
They must be picked carefully with their stems!
Otherwise the tree wont grow more fruit from that stem
Sour Cherries should also place gently into shallow baskets instead of a deep bucked

PREPARATION
Wash and strain the Sour Cherries
Discard the stems and seeds
Place in a pot
Pour 1 kg of sugar over the Sour Cherries
Cover the pot with a lid and rest for 3-4 hours or overnight

COOKING
Sour Cherries will release their juice as they rest within the sugar
Set the stove to medium-high cook until the Sour Cherry and sugar mixture boils
Once the mixture begins to boil, cook for 15-20 minutes on medium heat

The bright-cherry colour of the Sour Cherry Jam is legendary!!

So, the boiling time is very precise for Sour Cherry

(!) Boil the mixture until the foam disappears and bubbles become transparent, not more than it is needed. Otherwise, the Cherries wonderful colour will turn to a dark brown that is not preferable

Now, it is time to add the lemon juice (or the citric acid) to the jam
Boil the jam for 2-3 more minutes and turn off the stove
Transfer the Sour Cherry jam into a wide and shallow container

SUN-COOKING
Place the container under the sun and cover it with a screen
Stir the jam twice per day; once in the morning and once in the afternoon
Its consistency will get thicker every day
Keep the jam under the sun for a minimum of 2-3 days, until it reaches your desired consistency
Sun-cooking gives the jam a bright colour and perfect consistency without additives

STORAGE
Prepare small, sealable and clean jars for storage
Evenly distribute the jam into the jars
Tightly close the lids and store them in a cool and dark room or a pantry
